Dr Juan José Murillo, in his 1993 thesis supervised by the professor, Dr Francisco Grande Covián, noted that Lower Aragon olive oil contains saturated fatty acids levels well below the average values found in other extra virgin olive oils, and has higher than normal levels of oleic and linoleic acid. This richness in unsaturated fatty acids and tocopherols gives it its high nutritional value and organoleptic properties, its fruity and harmonious aroma and its low levels of acidity.
